Chipotle Black Beans Copycat

These beans are quick and easy to throw together while adding that homemade touch to any Mexican dish. Use them in my Chicken Burrito Bowls for the perfect Chipotle copycat meal or add them along side Mexican Red Rice or Cilantro Lime Rice to round out a perfect home cooked Mexican meal.

 Cook onions for one minute. Add garlic.

Tips for this recipe

  • Making these a day ahead is a time saver, especially if you are using them in burrito bowls.
  • Double the recipe if using as a true side dish rather than an ingredient in burrito bowls.
  • Want a smokier flavor? Substitute canned chipotles in adobo sauce for the chili powder.
  • Don’t omit the bay leaf or lime juice.  The bay leaf adds to the unique flavor of the beans. Just remember to remove the leaf before serving. The lime gives it a bright pop of flavor at the end that balances the dish.

Ingredients
  

  • 1 can black beans drained
  • 1 tbsp olive oil
  • ½ cup water
  • 1 bay leaf
  • ¼ cup white onion chopped
  • 1 garlic clove minced or grated
  • ½ tsp cumin
  • 1 tsp chile powder
  • ½ lime juiced (feel free to add juice of a whole lime to taste!)
  • salt to taste but be sure not to under salt

Instructions
 

  • In a sauce pan add olive oil and heat to medium-low. Add onions and cook for one minute. Add garlic and stir until fragrant.
  • Add all other ingredients to the pot except for the lime juice and salt. Stir to combine.
  • Bring to a boil and reduce heat to a simmer.
  • Cook for 20 minutes or until thickened.
  • Remove bay leaf, add lime juice and season to taste with salt.
  • Enjoy!
