Cilantro Lime Rice

This is some tasty rice that makes the perfect base for a burrito bowl. Or a great side dish alternative to Mexican rice. Super easy to make it your own, too. Use lemons, limes or a combo of both. Double up if you love citrus. You choose! Check out how well it goes with my copycat Chipotle Chicken Burrito Bowls. Pure heaven. If they could, my family would have this dish every week. 🙂

 Prepare rice as directed. I like to include a splash of olive oil, a teaspoon of Kosher salt and a bay leaf.

  • Want more of that lime flavor to come through?  Add lime zest to the rice cooking water to help infuse the flavor.

Ingredients
  

  • 2 cups uncooked Basmati rice
  • water for cooking rice
  • 1 bay leaf
  • 2 tbsp butter
  • 1 teaspoon Kosher salt
  • 2 tbsp cilantro chopped
  • 1 tbsp lime juice
  • 1 tbsp lemon juice

Instructions
 

  • Cook rice per package instructions with the addition of one bay leaf and a total of 1 tsp salt added to the cooking water.
  • Once rice is cooked, remove the bay leaf.
  • Transfer rice into a large bowl.
  • Add butter and toss to melt and coat the rice.
  • Add lime juice, lemon juice and cilantro. Season to taste with additional salt. Toss one more time and serve!
