Chipotle Copycat Black Beans

These beans are quick and easy to throw together while adding that homemade touch to any Mexican dish.

- 1 can black beans drained
- 1 tbsp olive oil
- ½ cup water
- 1 bay leaf
- ¼ cup white onion chopped
- 1 garlic clove minced or grated
- ½ tsp cumin
- 1 tsp chile powder
- ½ lime juiced (feel free to add juice of a whole lime to taste!)
- salt to taste but be sure not to under salt
In a sauce pan add olive oil and heat to medium-low. Add onions and cook for one minute. Add garlic and stir until fragrant.
Add all other ingredients to the pot except for the lime juice and salt. Stir to combine.
Bring to a boil and reduce heat to a simmer.
Cook for 20 minutes or until thickened.
Remove bay leaf, add lime juice and season to taste with salt.
