Pico de Gallo

We love pico de gallo at my house.  It is the perfect condiment for adding a little zip to your food.  Best of all, it is so darn good for you!  Low calorie and healthy.  As a mom, I can’t ask for much more.  This pico is especially great loaded on top of my Chicken Burrito Bowls.  Enjoy!

Chop up all of the ingredients and place in a bowl.

 Stir together.  Check for seasoning.  Add salt if needed. Enjoy!

Tips for this recipe

  • Roma tomatoes work best in this recipe because of their firm interiors. 
  • For the best flavor let it marinate for an hour, up to 24 hours.
  • Mix things up by adding diced avocado or bell pepper.  Throw in some black beans or corn kernels to make it more of a cowboy caviar.
  • Like it mild?  Remove the jalapenos.
  • Like it spicy?  Add more jalapenos or consider using a spicier pepper like serrano.
  • Serve with a slotted spoon to avoid adding too much liquid to your food.
  • The pico should last in the refrigerator for up to four days.

Ingredients
  

  • 3-4 Roma tomatoes diced (about 2 cups)
  • ¼ onion finely chopped
  • 1 jalapeno finely chopped
  • 2 tbsp cilantro finely chopped
  • 1 tbsp lime juice or to taste
  • salt to taste

Instructions
 

  • In a bowl, combine the Roma tomatoes, onion, jalapeno, cilantro, lime juice and salt. Stir to combine and chill until ready to use.
