Grilled Romaine

With summer weather comes the search for fun, tasty and easy recipes to complement whatever you’re cooking on the grill.  I am always looking for ways to add an unexpected twist to my go to dishes, making summer cookout season one of my favorite times to  cook.  Sometimes one little twist is all it takes to turn a good dish into a fantastic dish.   This is exactly what happens when you throw a head of romaine lettuce on the grill.   Not only do you add a bit of smoky flavor, but you also enhance the natural sweetness of the romaine, making it a completely different experience.  If you want to really impress,  make your own croutons.  For a quick and easy crouton recipe check out my  Caesar Salad Cups and throw on the crispy garlic bits, too!

Grilled Romaine

Ingredients
  • 2 heads of romaine lettuce
  • 1 tablespoon olive oil
  • Your favorite salad dressing (in this recipe I have used my favorite Caesar)
  • Shaved Parmesan (or whatever cheese goes well with your dressing)
  • Croutons (preferably homemade) see my recipe for Caesar Salad Cups
  • Salt and fresh ground pepper to taste
Instructions
  1. Turn grill on to medium high
  2. Wash outside of lettuce heads and dry.
  3. Cut lettuce in half the lengthwise.
  4. With a basting brush, brush cut sides with olive oil.
  5. Place cut side down on the hot grill.
  6. Cook 4-5 minutes, or until slightly wilted with nice grill marks.
  7. Remove and let cool slightly.
  8. Drizzle with your favorite dressing, sprinkle with cheese and croutons and serve.
Also try with Blue cheese dressing, blue cheese crumbles and bacon for another amazing taste sensation.
