Grilled Romaine

Serves: 4 servings
- 2 heads of romaine lettuce
- 1 tablespoon olive oil
- Your favorite salad dressing (in this recipe I have used my favorite Caesar)
- Shaved Parmesan (or whatever cheese goes well with your dressing)
- Croutons (preferably homemade) see my recipe for Caesar Salad Cups
- Salt and fresh ground pepper to taste
- Turn grill on to medium high
- Wash outside of lettuce heads and dry.
- Cut lettuce in half the lengthwise.
- With a basting brush, brush cut sides with olive oil.
- Place cut side down on the hot grill.
- Cook 4-5 minutes, or until slightly wilted with nice grill marks.
- Remove and let cool slightly.
- Drizzle with your favorite dressing, sprinkle with cheese and croutons and serve.
