Cilantro Lime Rice

This rice is super easy to make your own. Use lemons, limes or a combo of both. Double up if you love citrus. You choose! Check out how well it goes with my copycat Chipotle Chicken Burrito Bowls.

Ingredients
  

  • 2 cups uncooked Basmati rice
  • water for cooking rice
  • 1 bay leaf
  • 2 tbsp butter
  • 1 teaspoon Kosher salt
  • 2 tbsp cilantro chopped
  • 1 tbsp lime juice
  • 1 tbsp lemon juice

Instructions
 

  • Cook rice per package instructions with the addition of one bay leaf and a total of 1 tsp salt added to the cooking water.
  • Once rice is cooked, remove the bay leaf.
  • Transfer rice into a large bowl.
  • Add butter and toss to melt and coat the rice.
  • Add lime juice, lemon juice and cilantro. Season to taste with additional salt. Toss one more time and serve!
