Cilantro Lime Rice

This rice is super easy to make your own. Use lemons, limes or a combo of both. Double up if you love citrus. You choose! Check out how well it goes with my copycat Chipotle Chicken Burrito Bowls.

- 2 cups uncooked Basmati rice
- water for cooking rice
- 1 bay leaf
- 2 tbsp butter
- 1 teaspoon Kosher salt
- 2 tbsp cilantro chopped
- 1 tbsp lime juice
- 1 tbsp lemon juice
Cook rice per package instructions with the addition of one bay leaf and a total of 1 tsp salt added to the cooking water.
Once rice is cooked, remove the bay leaf.
Transfer rice into a large bowl.
Add butter and toss to melt and coat the rice.
Add lime juice, lemon juice and cilantro. Season to taste with additional salt. Toss one more time and serve!
