The Farmer’s Market is my favorite place this time of year.  There is just nothing better  than a beautiful red, perfectly ripe tomato…not to mention the great  childhood  memories of summer that they bring back.  I actually love growing my own tomatoes.  Unfortunately, I’ve had absolutely no luck the last few years.  That’s why I love my Farmer’s Market!   Serve this as an appetizer or a perfect light meal on a warm summer evening!

Tomato and Buffalo Mozzarella Crostini

Ingredients
  

  • 1 baguette sliced sandwich style
  • 3 tablespoons Extra Virgin Olive Oil
  • 1 garlic clove optional
  • 2 to matoes preferably homegrown or from the Farmer's Market
  • 1-2 balls Buffalo mozzarella I have found great ones at Costco and Trader Joe's
  • 4 fresh basil leaves sliced thin
  • Kosher salt and pepper to taste

Instructions
 

  • Slice baguette down the middle into two even halves, then only with the top half, carefully take a thin slice from the crusty top side so that it will sit flat when served on a plate.
  • Turn oven to broil.
  • Cut the garlic clove in half, and gently rub along cut side of baguette.
  • Brush some olive oil on the inside cut side of the halved baguette. Sprinkle with a pinch Kosher salt.
  • Place in preheated broiler until crisp and lightly browned. Approximately 2-3 minutes depending on your oven.
  • Cut baguettes into serving size pieces.
  • Slice tomatoes and mozzarella.
  • Thinly slice basil leaves.
  • Begin layering onto the bread...tomato slices then mozzarella slices.
  • Drizzle with olive oil and sprinkle with salt and pepper if desired.
  • Garnish with sliced basil leaves.
  • There is nothing left but to Enjoy!
  • Serve immediately...you don't want the bread to get soggy!
