Crunchy Chinese Chicken Salad

This crunchy and super flavorful salad has you covered on those hot evenings when the last thing you want to do is cook!  There really is nothing better than this salad’s refreshingly cool crunch and burst of Asian flavors…except  maybe the fact that you don’t have to slave over a hot stove to make it!  Enjoy!

Crunchy Chinese Chicken Salad

Ingredients
For the Dressing:
  • 3 tablespoons soy sauce
  • 3 tablespoons rice wine vinegar
  • ⅓ cup vegetable oil (I don't recommend you use olive oil...too strong)
  • ½" to 1" piece ginger, grated
  • 1 garlic clove, grated
  • 2 tablespoons sugar
  • 2 teaspoons sesame oil
For the Salad:
  • 4 cups chopped romaine lettuce
  • 2 cups shredded red cabbage
  • 2 carrots, shredded
  • 3 green onion, chopped
  • 1 can mandarin oranges, drained
  • 1 can sliced water chestnuts, drained
  • 1 tablespoon cilantro, chopped
  • 1 cup chow mein noodles
  • ½ a rotisserie chicken, or 2 cups cooked chicken, diced
Instructions
  1. To prepare the dressing, whisk together the soy sauce, rice wine vinegar, vegetable oil, grated ginger, grated garlic, sugar and sesame oil.
  2. In a large bowl toss salad and dressing, leaving out the chow mein noodles. Just before serving add in chow mein noodles and toss. Enjoy!
