Crunchy Chinese Chicken Salad

Serves: 4 servings
- 3 tablespoons soy sauce
- 3 tablespoons rice wine vinegar
- ⅓ cup vegetable oil (I don't recommend you use olive oil...too strong)
- ½" to 1" piece ginger, grated
- 1 garlic clove, grated
- 2 tablespoons sugar
- 2 teaspoons sesame oil
- 4 cups chopped romaine lettuce
- 2 cups shredded red cabbage
- 2 carrots, shredded
- 3 green onion, chopped
- 1 can mandarin oranges, drained
- 1 can sliced water chestnuts, drained
- 1 tablespoon cilantro, chopped
- 1 cup chow mein noodles
- ½ a rotisserie chicken, or 2 cups cooked chicken, diced
- To prepare the dressing, whisk together the soy sauce, rice wine vinegar, vegetable oil, grated ginger, grated garlic, sugar and sesame oil.
- In a large bowl toss salad and dressing, leaving out the chow mein noodles. Just before serving add in chow mein noodles and toss. Enjoy!
