Cranberry Brie Poppers

The combination of brie and puff pastry with a hint of sweet from the cranberries and pear make this appetizer irresistible. Make extra, because as I discovered, these are a hit with the kids as well!

 Cut pastry dough into two x two inch squares.

Tips for this recipe

  • For best results thaw the pastry dough overnight. It helps avoid cracking!   
  • Use a pizza cutter to easily cut squares of pastry dough.
  • Make it your own by using dried blueberries, dried apricots or fig jam in place of the cranberries.

Ingredients
  

  • 1 sheet puff pastry dough
  • 1 can Bartlett pears in light syrup drained and chopped
  • 1 8 oz wedge brie whatever size you can find, simply adjust individual amounts

Keep brie refrigerated until ready to cut.

  • 1/2 cup dried cranberries or other dried fruit chopped up

This would also be fantastic with dried blueberries, chopped dried apricots or a dollop of your favorite jam (like fig) in place of the cranberries

    Instructions
     

    • Thaw the puff pastry dough at room temperature for 30-40 minutes
    • Preheat the oven to 400 degrees
    • Flour your work surface and roll out the dough to approximately a 14 inch square
    • Cut into two inch squares (the number may vary depending on how flat you want to roll the dough)

    A pizza cutter works great here.

    • Press the dough into mini muffin tins.
    • Coarsely chop the pears and put a few chunks into the center of each square.
    • Cut edges from brie, cube into bite size pieces and place over pear.
    • Top each with dried cranberries.
    • Bake for 12 to 15 minutes or until puffed and golden brown.
    • Serve warm and Enjoy!
