Lemon Garlic Aioli

Aioli…oh, so many uses!  I made this one to go with my Grilled Artichokes.  Though the artichokes are fantastic by themselves, this will take them over the top.   Aioli can be served with pretty much everything… burgers, shrimp, crab cakes, grilled veggies, eggs, crudités and even French fries.  So quick and easy to make, if you haven’t had aioli, especially with artichokes, you have got to give it a try.  Served alongside Grilled Artichokes, it makes the perfect side dish for summer barbeques.  Plus, so convenient!  You can make the artichokes  ahead and reheat on the grill when you are ready.

Ingredients
  

  • 1/3 cup mayonnaise
  • 1/8 teaspoon Dijon mustard
  • 3-4 teaspoons lemon juice
  • 1/8 teaspoon lemon pepper seasoning
  • 1/4 teaspoon Kosher salt
  • 3 garlic cloves (see instructions below) mashed with kosher salt (see above photos)
  • 1 teaspoon olive oil

Instructions
 

  • Add mayonnaise, Dijon mustard, lemon juice and lemon pepper seasoning to a medium bowl and stir to combine.
  • The garlic can either be thrown into the pot of water with your artichokes when preparing together and boiled until soft. (approximately 20 minutes...refer to grilled artichoke recipe) OR peel and place in a small bowl with water, microwave for 2 minutes and let sit for another 5 minutes. (just long enough to soften them up a bit and temper their flavor)

If you are a garlic freak, you can just mash them fresh and skip this step all together!

  • Place garlic on a cutting board, sprinkle with all of the salt and slowly begin mashing with a larger bladed knife, pressing down and spreading the garlic with the knife at the same time (just think smash and spread) The salt helps to break down the garlic to help you take it to a smooth paste.
  • Keep smashing and spreading until you reach a consistency similar to the above picture.
  • Add mashed garlic to bowl and combine really well.
  • Finish by adding the olive oil and stir well to combine.

Serve in small individual dipping bowls or a large bowl with a spoon...and Enjoy!
