Cranberry Brie Poppers

This four ingredient appetizer can be put together at a moments notice and is sure to impress! The combination of brie and puff pastry with a hint of sweet from the cranberries and pear make this appetizer irresistible.

- 1 sheet puff pastry dough
- 1 can Bartlett pears in light syrup drained and chopped
- 1 8 oz wedge brie whatever size you can find, simply adjust individual amounts
Keep brie refrigerated until ready to cut.
- 1/2 cup dried cranberries or other dried fruit chopped up
This would also be fantastic with dried blueberries, chopped dried apricots or a dollop of your favorite jam (like fig) in place of the cranberries
Thaw the puff pastry dough at room temperature for 30-40 minutes
Preheat the oven to 400 degrees
Flour your work surface and roll out the dough to approximately a 14 inch square
Cut into two inch squares (the number may vary depending on how flat you want to roll the dough)
A pizza cutter works great here.
Press the dough into mini muffin tins.
Coarsely chop the pears and put a few chunks into the center of each square.
Cut edges from brie, cube into bite size pieces and place over pear.
Top each with dried cranberries.
Bake for 12 to 15 minutes or until puffed and golden brown.
