As simple as au jus is, it adds the perfect finishing touch to your prime rib dinner.

- 3 tablespoons butter
- ½ shallot finely chopped
- 1 ½ tablespoons all-purpose flour
- 2 cans beef consommé you should be able to find it with all of the other canned soups
- ¼ cup drippings from your prime rib
Melt butter on low in a large skillet.
Add chopped shallots to the butter, turn heat to medium and saute for a couple of minutes until softened.
Add flour to the butter and shallot mixture and cook a minute longer.
Pouring consommé in a slow stream, whisk sauce until it comes to a bubble.
Once roast is done, add drippings and whisk to incorporate.
Simmer over low heat until ready to serve along side your prime rib.
