Smoky BBQ Baked Beans

Ingredients
  

  • 6 slices bacon cooked to slightly crispy then chopped into thin strips (see picture)
  • 2-3 tablespoons bacon fat
  • 1/2 large onion chopped small
  • 1 chipotle pepper in adobo sauced minced, plus 1-2 tablespoons adobo sauce (to taste)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce
  • 2 cloves garlic minced
  • 1/2 cup bbq sauce your favorite
  • 1/4 cup apple cider vinegar
  • 1/2 dark beer or whatever you have at home in the fridge
  • 1 teaspoon Kosher salt
  • 1/8 teaspoon Liquid Smoke optional
  • 2 cans white beans drained (Navy if you can find them, or white chili beans)
  • 1 can Pork and Beans

Instructions
 

  • Preheat oven to 350 degrees F.
  • Cook bacon until just crispy and drain on paper towels. Take 3 tablespoons of the bacon fat and add to a large frying pan.
  • Place frying pan over medium heat and add the chopped onion. Cook until translucent. Remove from heat.
  • In a small bowl combine the chipotle, mustard, soy sauce, garlic, bbq sauce, apple cider vinegar, salt and liquid smoke. Stir well to combine. Add the beer and stir well again.
  • Pour the mixture over the onions in the pan and stir. Add the drained beans, pork and beans and bacon. Combine well and transfer to a 9x13x2 glass dish.
  • Bake uncovered for 40-50 minutes, or until thickened and bubbly.
  • It will continue to thicken slightly once removed from the oven. You can add a little water or beer for a saucier consistency at the end.
