Preheat oven to 350 degrees F.
Cook bacon until just crispy and drain on paper towels. Take 3 tablespoons of the bacon fat and add to a large frying pan.
Place frying pan over medium heat and add the chopped onion. Cook until translucent. Remove from heat.
In a small bowl combine the chipotle, mustard, soy sauce, garlic, bbq sauce, apple cider vinegar, salt and liquid smoke. Stir well to combine. Add the beer and stir well again.
Pour the mixture over the onions in the pan and stir. Add the drained beans, pork and beans and bacon. Combine well and transfer to a 9x13x2 glass dish.
Bake uncovered for 40-50 minutes, or until thickened and bubbly.
It will continue to thicken slightly once removed from the oven. You can add a little water or beer for a saucier consistency at the end.
