Instant Pot Pinto Beans

- 16 ounces dried Pinto beans cleaned per package instructions
- 5 1/2 cups water
- 1 bay leaf
- 5 cloves garlic smashed
- 1/2 onion cut into large dice or chunks large if removing, small if serving with the beans
- 1 tbs olive oil to keep beans from foaming
- 6-7 shakes chili powder
- 3-4 shakes granular garlic
- 5-6 shakes cumin
- 3-4 shakes or grinds black peper
- 1-2 tbs kosher salt or to taste
Place beans, water, bay leaf, garlic, onion and olive oil into instant pot. Turn on Bean setting or High Pressure cook for 28 minutes with a natural release. (allowing pressure cooker to release pressure on its own-about 10-15 minutes)
Open Instant Pot. Turn on to Saute.
Add the remaining seasonings (chili powder, granular garlic, cumin, salt and pepper) and stir to combine.
Cook 20 minutes or until thickened, stirring occasionally. Remove bay leaf and onions if desired. Taste for seasoning. Add more if desired.
Serve in broth, strained or mashed if desired.
