Equipment

  • Instant Pot/ Pressure Cooker

Ingredients
  

  • 16 ounces dried Pinto beans cleaned per package instructions
  • 5 1/2 cups water
  • 1 bay leaf
  • 5 cloves garlic smashed
  • 1/2 onion cut into large dice or chunks large if removing, small if serving with the beans
  • 1 tbs olive oil to keep beans from foaming
  • 6-7 shakes chili powder
  • 3-4 shakes granular garlic
  • 5-6 shakes cumin
  • 3-4 shakes or grinds black peper
  • 1-2 tbs kosher salt or to taste

Instructions
 

  • Place beans, water, bay leaf, garlic, onion and olive oil into instant pot. Turn on Bean setting or High Pressure cook for 28 minutes with a natural release. (allowing pressure cooker to release pressure on its own-about 10-15 minutes)
  • Open Instant Pot. Turn on to Saute.
  • Add the remaining seasonings (chili powder, granular garlic, cumin, salt and pepper) and stir to combine.
  • Cook 20 minutes or until thickened, stirring occasionally. Remove bay leaf and onions if desired. Taste for seasoning. Add more if desired.
  • Serve in broth, strained or mashed if desired.
