Equipment

  • stand mixer

Ingredients

  • 3/4 cup butter
  • 2 1/2 cups white sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 6 very ripe bananas
  • 2 cups sourcream
  • 3 eggs
  • 2 teaspoons vanilla
  • 1 1/4 teaspoon salt
  • 3 teaspoons baking soda
  • 4 1/2 cups all purpose flour
  • 1-2 cups chopped toasted walnuts

Instructions

  • Brown butter in a medium sauce pan until it is a few shades darker than golden. Set aside and allow to cool down while prepping everything else.
  • Turn oven on to 300F. Spread walnuts evenly on a sheet pan and toast for 10 minutes. Let cool slightly and chop.
  • Increase oven temp to 350F.
  • Butter baking pans. (I use two 9x5 inch pans and have a little left over to fill a small one too)
  • Using your stand mixer, mash bananas. Add sour cream and continue to mix until incorporated. Mix in sugars, cinnamon, eggs and vanilla.
  • Add flour, salt, baking soda and chopped walnuts. Mix until combined.
  • Slowly drizzle cooled brown butter into bowl and mix until creamy and well blended.
  • Give the batter one more good stir to even out the walnut distribution before pouring batter into your pans. (fill to about an inch from the top of the pan) Bake at 350F for 50-60 minutes or until a toothpick inserted into the middle comes out clean.
  • Allow to cool slightly before removing from pans.
  • Enjoy! Toast and butter for extra enjoyment! :)
