Churro Cookies

Who doesn’t LOVE churros???  Sticks of crispy, sugary cinnamon goodness that are darn near impossible to resist!  As amazing as they are, most of us wait for events like the county fair to eat our fill.  These cookies are nothing short of mini churros…as crunchy and sugary but incredibly easy to make  with no deep frying necessary.  Yes,  deep frying does make everything taste better…I am the first to admit it!  But this recipe may just prove me wrong!  Enjoy!!

Let dough cool to touch and scoop into a pastry bag fitted with

the largest star tip you can find. (I used a Wilton 1M tip)

Pipe dough into roughly 4 inch lines or whatever shape you like!

Bake 20-25 minutes until churros are golden brown and crispy.

Ingredients
  • 1 cup water
  • 1 cinnamon stick (optional)
  • ½ cup butter ( I use salted but you can go unsalted and adjust the salt yourself)
  • ½ teaspoon salt
  • 1 tablespoon white sugar
  • ½ teaspoon vanilla extract
  • 1 cup all purpose flour
For the coating:
  • ¼ cup white sugar
  • 1 teaspoon cinnamon
  • 1 large sealable plastic bag
Instructions
  1. Turn oven on to 400 degrees F
  2. In a medium saucepan over medium heat, add water, cinnamon stick, butter, sugar and salt. Bring to a boil stirring until the butter is melted. Remove from the heat and remove the cinnamon stick. Add the flour and vanilla extract. Stir until it becomes a smooth dough ball.
  3. Let dough cool to touch and scoop into a pastry bag fitted with the largest star tip you can find. (these were done with a Wilton 1M tip)
  4. Pipe dough onto a parchment lined baking sheet into roughly 4 inch lines or whatever shape you like!
  5. Bake 20-25 minutes until churros are golden brown and crispy.
  6. Remove from oven and let them cool for a few minutes.
  7. Place ¼ cup sugar and cinnamon into plastic bag and shake to combine. Add cookies a few at a time, seal bag and gently shake until cookies are completely covered in the cinnamon goodness. Gently shake them off if desired.
Cookies are best when eaten the same day, but will be fine if stored in a sealed container once cooled completely. Enjoy!
