Bet you had no idea you could...Fried Capers

Serves: 2 tablespoons
Ingredients
  • 2 tablespoons drained nonpareil capers (nonpareil simply designates their size)
You can also use Capote Capers which are larger.
  • 2 tablespoons olive oil
  • small skillet
Instructions
  1. First you need to rinse the capers to remove excess salt.
  2. Pat them dry with paper towels.
  3. Heat the oil in the skillet over medium-high heat.
  4. When the oil is hot, add the capers and fry occasionally shaking the pan or stirring until most of them open like flowers and become crisp and slightly brown.
Just be careful, the oil will splatter once the capers are added. It is a good idea to have a splatter screen of some sort to cover the skillet once you add them.
  1. This should take about 2-3 minutes.
  2. Remove the skillet from the heat and using a spoon transfer the capers to a dry paper towel to drain.
  3. Try not to eat them all before you need them!
