Chop bacon and cook in a large skillet over medium heat until just crispy. Place bacon on paper towels to drain and reserve 2 tablespoons of the bacon fat in the pan to cook the onions.
Add the onions and cook at medium/medium-low until translucent. Mix in remaining ingredients except the bacon. Bring to a boil, then reduce heat to barely simmer.
Add the bacon to the skillet. Cook uncovered, stirring occasionally until it thickens. (approximately 30 minutes)
Place in food processor and pulse until you reach desired consistency. (keeping some texture to the jam is a good thing!)
Serve! Enjoy! Refrigerate for up to 4 weeks.
