Mexican Red Rice

Ingredients
  • 4 tablespoons oil
  • 1½ cups Basmati rice
  • 3 cloves garlic, minced
  • ¼-1/2 onion diced
  • 1- 8 ounce can tomato sauce
  • 2-3 tablespoons chicken bouillon
  • 2½ cups water
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ cup frozen peas or corn (optional)
Instructions
  1. Heat the oil in a heavy skillet on medium high.
  2. Add rice, stirring until light brown.
  3. Add the diced onions and garlic and continue to stir until onions soften and garlic is fragrant.
  4. Add the tomato sauce, chicken bouillon, water, salt, pepper and peas or corn.
  5. Reduce heat, cover and simmer for 20 minutes.
  6. Remove from heat and let sit until ready to serve. Enjoy!
