Smoky BBQ Baked Beans

You can’t serve cornbread without some really good baked beans…now the meal is complete!   These beans are tangy, yet sweet with a slight kick of heat from the smoky chipotle peppers in adobo sauce.  It is a great combination!  Really love that smoky bbq flavor?  Simply add a little liquid smoke.  It’s fun to experiment with.  Just be careful, the stuff is potent.  A little bit goes a long way, and a lot goes really bad, fast!  Your best bet is Wright’s Liquid Smoke.  You should be able to find it with the bbq sauces.  You’ve got to combine this with my Killer Cornbread for the perfect bbq meal!

Ingredients
  

  • 6 slices bacon cooked to slightly crispy then chopped into thin strips (see picture)
  • 2-3 tablespoons bacon fat
  • 1/2 large onion chopped small
  • 1 chipotle pepper in adobo sauced minced, plus 1-2 tablespoons adobo sauce (to taste)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce
  • 2 cloves garlic minced
  • 1/2 cup bbq sauce your favorite
  • 1/4 cup apple cider vinegar
  • 1/2 dark beer or whatever you have at home in the fridge
  • 1 teaspoon Kosher salt
  • 1/8 teaspoon Liquid Smoke optional
  • 2 cans white beans drained (Navy if you can find them, or white chili beans)
  • 1 can Pork and Beans

Instructions
 

  • Preheat oven to 350 degrees F.
  • Cook bacon until just crispy and drain on paper towels. Take 3 tablespoons of the bacon fat and add to a large frying pan.
  • Place frying pan over medium heat and add the chopped onion. Cook until translucent. Remove from heat.
  • In a small bowl combine the chipotle, mustard, soy sauce, garlic, bbq sauce, apple cider vinegar, salt and liquid smoke. Stir well to combine. Add the beer and stir well again.
  • Pour the mixture over the onions in the pan and stir. Add the drained beans, pork and beans and bacon. Combine well and transfer to a 9x13x2 glass dish.
  • Bake uncovered for 40-50 minutes, or until thickened and bubbly.
  • It will continue to thicken slightly once removed from the oven. You can add a little water or beer for a saucier consistency at the end.
